The power of honey lies not only in the fact that it contains up to 30 different types of sugar such as fruit and grape sugar (easily absorbed by the body) and almost 200 proven accompanying substances. These include organic acids, ferments, vitamins, aromatic substances and minerals such as phosphorus, iron, calcium, copper, manganese, magnesium, sodium, potassium and many antibacterial agents (inhibins which have an antibiotic effect). The Honey Ordinance defines honey as a naturally sweet substance that is produced by honey bees in that the bees absorb nectar from plants or secretions from living parts of plants or excretions from insects sucking on the living parts of plants, by combining it with their own specific substances, converting, storing and dehydrating it (Withdrawal of water) and store and mature in the honeycomb of the beehive.

If properly stored, honey will last for months and even years. However, you should make sure that it is always stored in a cool, dry and dark place. Always close the jar tightly, as honey quickly absorbs moisture and unpleasant foreign odors.

Crystallization does not affect the quality of the honey, it is a natural process. Certain types, such as clover honey, crystallize immediately after the honey harvest. Others, fir honey, take years to crystallize. This is due to the different proportions of grape and fructose. If the proportion of glucose is higher, the honey crystallizes faster and more firmly. Honey jar inscriptions such as "Auslese" or "Selection", "honeycomb-proof", "beekeeper honey" are just empty phrases that mean nothing.

But honey is by no means honey, even if the production process (of the bee) is always the same. Because the end product, which is obtained from the honeycomb by dripping, centrifuging, filtering or pressing, differs in numerous properties. The color can range from almost colorless to dark brown. The texture can be liquid, viscous or partially continuously crystalline. The differences in taste and aroma are mainly determined by the respective botanical origin. Depending on the raw material, a distinction is made between blossom honey and honeydew honey. Blossom honey comes completely or predominantly from the blossom nectar. Honeydew honey, on the other hand, comes from the honeydew of numerous tree species. These are insect excretions. The insects have previously pricked the supply system of plants, processed the substances they could use and excreted the rest as honeydew. The bees collect this sugary excreta. Honeydew honey is always dark, particularly rich in minerals and has a malty-spicy aroma and is more of a specialty.

Benefits of honey - does the way the honey is obtained affect the bees' product?

1. Honeycomb or disc honey (virgin honey) is honey that is still in the capped, brood-free cells of the honeycombs made by bees themselves. The honeycombs are cut and brought onto the market in portions. Honeycomb honey is a product that has not undergone any mechanical or thermal treatment (such as centrifuging, stirring, "melting, thawing") and is therefore of particularly high quality. This old Germanic specialty is therefore enjoying increasing popularity. However, test series are repeatedly carried out in which 90 percent of the honeycomb honey is sometimes rejected. Mostly it is imported honey, which contains middle walls and is contaminated with antibiotics or bee repellants. However, native honeycomb honey is also affected if it has not been produced and obtained in accordance with the criteria of the Center for Beekeeping. According to EU legislation, even artificial dividing walls are allowed in the honeycomb honey. - Where can you still buy this unadulterated specialty of the ancient Celts and Teutons? 4. Drip honey (running honey): This specialty is considered the best honey after honeycomb honey. The beekeeper lets the honey flow out of the uncapped comb. 5. The best-selling honey is centrifugal honey; it is thrown out of the uncapped honeycomb (in a centrifuge). It is the most common in trade. The advantages of honey in this variety are only expressed in a weakened form.

6. With press honey, the honeycombs are pressed or the honey is obtained by heating to a maximum of 45 degrees Celsius. Here, too, the advantages of honey are only available to a small extent.

7. Honey no longer has any advantages if it is filtered through the so-called ultrafiltration - and thus also adulterated in a certain way; because this honey is heated and pressed through ceramic filters. It must then be labeled as filter honey and hardly contains any typical honey components such as pollen. (Usually only for imported honey from countries in which contamination of the honey with genetically modified pollen is to be feared)

8. Artificial honey: Is a substitute product similar to honey, but artificially produced. It consists of invert sugar, which is artificially produced by breaking down cane sugar, of residual sugar (sucrose max. 20%), starch sugar or starch syrup, honey aroma, caramel (= burnt sugar, which is used for coloring). Mixing artificial honey with real honey is allowed, but the blend must be labeled as artificial honey! (Very cheap and usually only available in the supermarket).

Therefore, the power of honey can be greatly reduced, especially if the beekeeper does not operate according to certain guidelines - which must go beyond the standards of organic beekeeping. More important than an analysis of the end product is the origin of the raw material and the mode of operation of the beekeeper.
